WIAW: Spaghetti Squash & Bagels
Today I’m linking up with Peas and Crayons for What I Ate Wednesday. It’s been awhile since I last did a WIAW since my blog move, so I’m going to briefly cover the weekend and a few things from last week.
For breakfast lately I’ve been really into having a green monster smoothie. It cools me off and fills me up while getting in some greens!
I’ve been trying to get back to not eating dairy. That means cutting out my lovely coffee creamers again. So on Sunday I made my own coffee creamer with almond milk and some sweeteners. It turned out surprisingly good! It’ll take a bit for me to adjust to the taste, but now my future of dairy free coffee creamers seems a little brighter and tastier.
For lunch during the school day I’ve been taking chicken I cook in the crock pot with roasted broccoli and sweet potatoes and some energy balls. The past two Sundays I’ve been able to prep all of this so all I have to do is throw it into my nifty lunch container. I’ve enjoyed having this for lunch and it holds me over until school is over for the day.
I tried my first spaghetti squash last week. My sister baked it in the oven. Then I shredded it and she sauteed it in olive oil. We added the pasta sauce and some shredded chicken we already had. I was impressed by how much I enjoyed the taste. I honestly didn’t even miss actual pasta. We’ll be fixing more spaghetti squash dishes for sure!
One of my best girlfriends came to visit last weekend. For breakfast we went to one of our favorite coffee shops called Milagros. We both got bagels and iced coffee. My bagel is obviously the one slathered in peanut butter. Milagros hasn’t let me down yet with their excessive amounts of peanut butter. That’s just the way I like it.
Sunday brunch was a breakfast burrito from Andeles. I know some people are thinking ehhh what the heck is this girl eating? It doesn’t look too appetizing, but its an egg and bacon burrito covered in green chile sauce. This place makes creamy green chile sauce so it’s not my favorite, but I was starving on Sunday so I didn’t complain.
Last but not least, I used Apple of My Eye’s Fluffy Chunky Monkey Pancakes recipe. I made the batter, but didn’t add in the bananas, chocolate, or walnuts because not everyone I was making them for would have enjoyed that (not cool I know). Anyways, they were delicious and smelled so sweet when they were cooking. Next time I make these I’m adding the bananas and chocolate into the batter. No exceptions will be allowed.

Mhmmm those pancakes=love. You definitely should add in the walnuts/chocolate chips/banana slices the next time you make them! Those add-ins totally take the recipe over the top. That and the fact that I slather them in maple syrup and chocolate sauce hahah ;).
Great eats! I really need to jump on the green smoothie train, but I’m just a big baby about having to clean out the blender haha.

Your pancake recipe is so good and yeah next time definitely adding in the slices! Cleaning out the blender is the worst part. I hate it too.
