Yesterday I returned from my weekend trip in South Dakota visiting my boyfriend’s sister and her boyfriend. A recap post with lots of pictures will be coming soon! Here’s a teaser picture.
Anyways, today was the first day I worked out in 5 days!! An actual work out anyways. We were pretty active for the most part.
I ran 3 miles this morning and it was a little rough. You know those runs that are just a struggle to get through. That was my 3 miles this morning. It did feel good to go on a run though. It was a nice morning today.
I haven’t had a banana in almost a week and at home we have this basket of overripe bananas. So during my run this morning I was thinking of what I could make with an overripe banana besides banana bread.
I went with protein pancakes. When I opened the spotty brown banana there wasn’t even a brown spot on it!!
I made a mixture of a mashed up banana, 1 egg, a scoop of protein powder, sprinkle of cinnamon, and a plop of vanilla. I covered my pan with some coconut oil.
Well, I haven’t been super successful at making protein pancakes this summer and this morning was another almost fail.
My first pancake cooked like an omelet. If I had simply let the bottom side cook longer then folded it over it would have been an omelet. I was like “what the heck am I doing!”
Why can’t I cook protein pancakes anymore!!! It’s very frustrating.
My second protein pancake came out okayyy. I don’t know if it’s the coconut oil or maybe I didn’t have enough like fiber type stuff in my mixture.
It was one of those eggy/banana-y tasting pancakes. Anyone who makes protein pancakes will know what I mean.
Now I need to get in the shower so I can go to my chiropractor appointment. I haven’t been in 3 weeks so my back and neck are aching to be adjusted!! Ahhh I can’t wait!

I have never made a protein pancake before but it is definitelyyyyyyyyyyyyyyyyy on my to-do list before the end of this year! {Giving myself a lot of leeway here. Ha.} As for the workout grind, mine is hit-and-miss when it comes to getting back into it. Usually a run {even if it kills me} makes me feel a lot better or I just take it easy and do twenty minutes on each of my normal machines a couple of times before ramping it up again :] I’m sick again at the moment {and it’s the middle of winter} so I think I’ll have a few more chances to perfect the art of re-entering the gym world for the both of us ;] Haha
