Three Easy Healthy Dinner Bowls: Our Latest Favorites

When it comes to planning dinner, I build meals that are simple and easy. Today I’m sharing three Easy Dinner Bowls that are macro friendly. To put these meals together my thought process goes something like this: 

-What protein are we going to have? (chicken, beef, pork, shrimp, etc.)
-What will be the main carb source? (Rice, potatoes, pasta, tortilla, etc.)
-What veggies are we having on the side? (Broccoli, green beans, veggie stir fry…)
-What is my main source of fat? (Most of the time I cook with olive oil or butter, so that usually counts for my fat source.) .

Three of our favorite dinner bowl combos lately:

1. Buffalo Chicken + White Rice + Broccoli

Throw chicken breasts in the crockpot. Drizzle Frank’s Red Hot Buffalo sauce on top along with pepper and whatever spices. Depending on if your chicken breast are fresh or frozen, I let them cook for 3-5 hours until fully done. Thanks to Kelly Yager for this obsession. I cook white rice in the Instant Pot. Broccoli is chopped and tossed in olive oil and seasonings. I roast it in the oven on 400F for 20 minutes. Put shredded chicken, rice, and broccoli in a bowl to enjoy! 

2. Grilled Pork Chops + Cous Cous + Zucchini

When this quarantine thing started rice was soldddd out. My Mom had cooked couscous for us in the past, so I picked up some boxes of Near East Couscous . So good! All the praise hands for nice grilling weather and a husband who likes to grill things like pork chops. I love to cook Zucchini in the air fryer. I dice the zucchini up. I toss the diced zucchini in a bowl with a drizzle of olive oil and seasonings then put in the air fryer. I usually cook zucchini anywhere from 20-25 minutes and stir around every five minutes.  Done! 

3. Yellow Gold Potatoes + Lean Ground Beef + Onions & Peppers + Green Beans

I season the ground beef with salt, pepper, red chile powder, onion powder, garlic powder. Then I cook in a skillet until fully browned and cooked. I buy Melissa’s Baby Dutch Yellow Potatoes. I dice the potatoes. Then I season and toss them in a bowl with a drizzle of olive oil. I cook the potatoes in the air fryer for 25-30 minutes and stir around every five minutes. In this photo I sautéed some onions and peppers in a pan and also cooked a side of green beans. This is the most recent combo the husband and I are obsessed with! We pour Red Chile Sauce on top because this New Mexico girl likes some spice! Maybe add some cheese too. Done!
